Preparation

  • Preheat the oven to 350°F (175°C). Lightly grease a mini tartlet pan or line a muffin tin with paper liners for easy removal.
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
  • Spoon the graham cracker mixture into each tartlet cavity, pressing it down firmly to create a well-formed base. Bake for 8-10 minutes or until golden brown. Allow to cool completely.
  • In a separate large bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, continuing to beat until fluffy.

Assembly

  • Once the crusts are cool, spoon the cream cheese filling into each tartlet shell, smoothing with a spatula.
  • Top each tartlet with a generous spoonful of cherry jam, spreading it gently over the cream cheese filling.
  • Sprinkle the chopped pistachios and finish with the chopped fresh cherries.

Chilling

  • Refrigerate the tartlets for at least 2 hours to allow flavors to set.
  • Serve chilled and enjoy!

Notes

Consider using homemade cherry jam for a fresh twist. You can substitute cream cheese with mascarpone for a richer filling.
