Main Ingredients

  • 2 medium aubergines (eggplants)
  • 2 tbsp miso paste Use your preferred type of miso.
  • 1 tbsp olive oil
  • 1 tbsp maple syrup Can substitute with agave nectar or brown sugar.
  • 1 tbsp soy sauce or tamari Use tamari for a gluten-free option.

Instructions
 

Preparation

  • Preheat your oven to 400°F (205°C).
  • Cut the aubergines in half lengthwise and make criss-cross cuts about ½ inch deep in their flesh.

Baking

  • Place the halved aubergines on a baking sheet and bake for 20 minutes.
  • While baking, mix the miso paste, olive oil, maple syrup, and soy sauce in a bowl until smooth.
  • Remove the aubergines from the oven and brush the miso glaze over the cut sides.
  • Return to the oven and bake for another 10-15 minutes until golden and soft.

Serving

  • Serve immediately and enjoy!

Notes

For extra flavor, consider grilling the eggplants. You can also add sesame seeds or chopped scallions before serving.
