Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease and flour two 8-inch cake pans.
  • In a large mixing bowl, combine the mashed bananas, sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Blend until well-combined.
  • In another medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet banana mixture, alternating with the buttermilk.
  • Gently fold in the chocolate chips.

Baking

  • Pour the batter evenly into the prepared cake pans.
  • Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes. Then, turn them out onto wire racks to cool completely.

Assembly

  • Once the cakes are completely cool, layer and frost them as desired. Consider using a rich chocolate ganache or a fluffy vanilla frosting.

Notes

For a richer flavor, add a pinch of espresso powder to the dry ingredients. Substitute vegetable oil with melted coconut oil for a unique twist. Warm slices in the microwave for a gooey experience.
