  • 1 lb 3-4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 10.5 oz 1 can cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 cup peas or broccoli (optional) For added crunch and nutrition

Preparation

  • Preheat your oven to 375°F (190°C) to prepare for baking.
  • Sauté the chopped onion in olive oil over medium heat until soft.
  • In a large bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, garlic powder, salt, and pepper. Stir until well blended.
  • If desired, fold in the peas or broccoli and half of the shredded cheese.
  • Transfer the mixture to a greased 9×13-inch baking dish, spreading evenly.

Baking

  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes until bubbly and golden brown.

Notes

To lighten the dish, consider low-sugar options or dairy-free substitutes. Leftovers can be stored in airtight containers and reheated appropriately.
