Instructions
 

Preparation

  • Crush the Biscoff cookies into fine crumbs using a food processor, or place in a sealed bag and crush with a rolling pin.
  • In a small bowl, combine crumbs with melted butter, mixing until evenly coated.
  • Spoon a layer of the cookie crumb mixture into the bottom of each cup, pressing down lightly to form a solid crust.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add powdered sugar, vanilla extract, and a pinch of salt, continuing to beat until well combined.
  • In another bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  • Add Biscoff spread and brown sugar, mixing until fully combined.
  • Layer the cheesecake filling on top of the cookie crust in each cup, smoothing out the top.

Chilling

  • Refrigerate the cheesecake cups for at least 2-3 hours or overnight to allow flavors to meld and cheesecake to set.

Serving

  • Garnish each cup with crushed Biscoff cookies before serving.

Notes

For added richness, drizzle extra Biscoff spread over the top before serving. Consider using crushed graham crackers for a different flavor, or adding chocolate ganache or shavings on top.
