Preparation

  • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, thyme, oregano, salt, and pepper. Mix well until all ingredients are fully incorporated.
  • Shape the mixture into 1 to 1.5-inch meatballs, ensuring they are uniform for even cooking.

Browning

  • Heat the olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches to avoid overcrowding. Brown them for 2-3 minutes per side until they develop a lovely golden crust.
  • Once brown, transfer the meatballs to a crock pot.

Sauce Preparation

  • In a separate bowl, whisk together the French onion soup, Worcestershire sauce, Dijon mustard, and fresh thyme until smooth.
  • Pour this mixture over the meatballs in the crock pot, ensuring they are well-coated.

Cooking

  • Cover the crock pot and cook on low for 4-6 hours or on high for 2-3 hours until the meatballs become tender and flavorful.
  • About 10 minutes before serving, sprinkle the shredded Gruyère cheese over the meatballs. Cover again to let the cheese melt.

Serving

Notes

For the best flavor, don’t skip browning the meatballs. If short on time, consider making them in advance and refrigerating. Ground turkey or chicken can substitute beef for a lighter option. For a thicker sauce, whisk in cornstarch and water towards the end of cooking.
