Vegetables

  • 1 large large cauliflower, perfectly fresh and vibrant

Oils and Seasonings

  • 6 tbsp olive oil, golden and fragrant
  • 1 tsp Old Bay seasoning, a blend of savory spices
  • 1/2 tsp chili pepper, for a hint of heat
  • to taste Fresh ground black pepper, to taste, adding depth

Cheeses

  • 8 oz sharp white cheddar cheese, grated, rich and creamy
  • 4 oz parmesan cheese, grated, with its nutty complexity

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the cauliflower florets with olive oil, Old Bay seasoning, chili pepper, and a sprinkle of black pepper. Toss until every floret is beautifully coated.
  • Line a baking sheet with parchment paper for easy cleanup. Spread the seasoned cauliflower evenly across the surface, making sure not to overcrowd the pan.

Cooking

  • Roast in the oven for 30-35 minutes, flipping the florets halfway through.
  • In the last 10 minutes of roasting, sprinkle the grated cheddar and parmesan cheese over the cauliflower.
  • Remove from the oven, let cool slightly, and serve warm.

Notes

For added flavor, consider adding smoked paprika or pairing it with a homemade dipping sauce. You can also substitute different cheeses or vegetables as desired.
