  • 1/3 cup 1/3 cup fresh grated Parmesan cheese Freshly grated gives better flavor and texture.
  • 1/4 teaspoon 1/4 teaspoon fresh ground black pepper Adjust to your taste.
  • 4 tablespoons 4 tablespoons potato starch Helps with the crispiness of the fries.
  • 2 tablespoons Fresh parsley, chopped For flavor and garnish.
  • 1 tablespoon 1 tablespoon potato starch (for dusting) Use for rolling out the mixture.

Instructions
 

Preparation

  • Boil the potato cubes in salted water until fork-tender, about 10-15 minutes.
  • Drain the potatoes well and mash until smooth, eliminating any lumps.
  • In a mixing bowl, combine the mashed potatoes with black pepper, parsley, Parmesan cheese, and 4 tablespoons of potato starch. Stir until well incorporated.
  • Divide the mixture into two equal portions and roll each into a compact dough ball.
  • Dust a clean surface with the remaining tablespoon of potato starch and roll each ball into a rectangle about 1/2 inch thick. Cut into strips resembling fries.

Cooking

  • Heat oil in a deep fryer or large pan until it reaches 350°F (175°C).
  • Carefully add potato strips to the hot oil in batches.
  • Fry until golden brown, approximately 5-7 minutes per batch. Avoid overcrowding.
  • Drain the fried strips on a wire rack over paper towels to absorb excess oil.
  • Serve hot, garnished with extra Parmesan and parsley if desired.

Notes

Use a mix of potatoes for better flavor. For extra crunch, pre-bake the fries before frying. Consider adding garlic powder or paprika for enhanced seasoning.
