Ingredients
  

For the cod

  • 2 fillets cod fillets Flaky and tender, the heart of the sandwich.

For the batter

  • 1 cup flour Base for the batter.
  • 1/2 cup cornstarch Ensures crunchiness.
  • 1 tsp salt Enhances flavors.
  • 1/2 tsp black pepper Adds a gentle kick.
  • 1/2 tsp paprika Introduces smoky sweetness.
  • 1/2 tsp garlic powder Infuses aromatic depth.
  • 3/4 cup cold soda water Creates a light and airy batter.

For the coating

  • 1 cup panko breadcrumbs Delightful crunch.
  • Oil for frying neutral oil Allows the crispy exterior to shine.

For assembly

  • 2 buns sandwich buns Soft and fluffy.
  • 1/4 cup tartar sauce Creamy and tangy.
  • lettuce & tomato slices Fresh and crisp.

Instructions
 

Preparation

  • Heat your oil to 350°F (175°C) in a large, deep skillet or fryer.
  • In a mixing bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Whisk until well mixed.
  • Gradually add the cold soda water to the dry mixture, stirring gently until smooth.
  • Take each cod fillet and dip it into the batter, letting the excess drip off before coating it with panko breadcrumbs.

Cooking

  • Carefully place the coated cod into the hot oil, frying for about 4 minutes on each side until golden brown.
  • Once cooked, transfer the fillets onto a plate lined with paper towels to drain excess oil.

Assembly

  • Spread a generous amount of tartar sauce on each bun.
  • Layer with lettuce and tomato slices for freshness.
  • Place a crispy cod fillet on top and close with the other half of the bun.
  • Serve immediately.

Notes

Ensure the oil is at the right temperature to prevent soggy or burnt batter. You can bake the cod at 425°F (220°C) for a lighter option.
