Preparation

  • Preheat the oil in a large skillet over medium heat to about 350°F.
  • In one bowl, mix the all-purpose flour, garlic powder, paprika, salt, and pepper.
  • In another bowl, whisk the eggs until light and frothy.
  • In a third bowl, combine the shredded coconut and breadcrumbs.
  • Dredge each chicken tender in the flour mixture, tapping off excess.
  • Dip the coated tender in the egg wash to create an even layer.
  • Coat the tender in the coconut-breadcrumb mixture firmly.

Frying

  • Carefully place the coated chicken tenders into the hot oil.
  • Fry for about 4-5 minutes on each side until golden brown.
  • Remove tenders from skillet and drain on paper towels.
  • Serve with dipping sauce.

Notes

For a healthier alternative, bake the tenders at 400°F for 15-20 minutes. Avoid overcrowding the skillet when frying. Always check for internal temperature of 165°F.
