Ingredients
  

For the Salad

  • 2-3 pieces chicken tenders or breasts
  • 3-4 pieces hard-boiled eggs
  • 4 cups mixed salad greens
  • 1 piece ripe banana, sliced
  • 2 tablespoons olive oil (for cooking)
  • Salt, pepper, garlic powder, paprika (for seasoning)

For the Vinaigrette

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice or vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt & pepper to taste

Instructions
 

Preparation

  • Season the chicken with salt, pepper, garlic powder, and paprika.
  • Heat 2 tablespoons of olive oil in a pan over medium heat. Cook the chicken until golden and fully cooked. Remove from the pan and let it rest before slicing.
  • Boil the eggs for about 10 minutes. Place them in ice water afterward, peel them, and slice.
  • In a small bowl, whisk together the vinaigrette ingredients until they are well mixed.

Assembly

  • In a serving bowl, layer the mixed salad greens. Top it with the sliced chicken, hard-boiled eggs, and banana.
  • Drizzle the vinaigrette over the salad just before serving and enjoy!

Notes

Serve the salad chilled or at room temperature. It's perfect as a light meal on its own or as a side dish alongside grilled meats. For extra crunch, consider adding nuts or seeds. Feel free to substitute the banana with other fruits like avocado or apple.
