  • 1.5 pounds fresh salmon fillets (skin removed, cut into bite-sized pieces) Use quality, fresh salmon for the best flavor and tenderness.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional) Optional for an extra kick.

Bang Bang Sauce

  • 0.5 cup mayonnaise
  • 0.25 cup Thai sweet chili sauce
  • 1 tablespoon sriracha sauce Adjust according to your desired heat level.
  • 1 tablespoon honey
  • 1 tablespoon freshly squeezed lime juice
  • to taste Fresh parsley or cilantro (for garnish)
  • to taste Green onions (for garnish)
  • to taste Sesame seeds (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or apply a light layer of grease.
  • In a medium-sized bowl, combine the bite-sized pieces of salmon with olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if desired). Toss together until the salmon is well coated.
  • Arrange the seasoned salmon pieces in a single layer on the prepared baking sheet, ensuring they are not overcrowded.

Baking

  • Bake for 10-12 minutes, or until the salmon is thoroughly cooked and the exterior is crispy and lightly golden.

Sauce Preparation

  • While the salmon is baking, make the Bang Bang sauce. In a small bowl, whisk together the mayonnaise, Thai sweet chili sauce, sriracha sauce, honey, and lime juice until smooth.

Finishing Touches

  • Once the salmon bites are finished baking, remove them from the oven. Transfer to a large bowl and pour the Bang Bang sauce over the top. Gently toss to coat.
  • Garnish with freshly chopped parsley or cilantro, thinly sliced green onions, and a sprinkle of sesame seeds. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at a low temperature to preserve crispness. You can also substitute salmon with shrimp or chicken for variations.
