Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash and peel the potatoes, then slice them into thin fries, about 1/4 inch thick.
  • Soak the fries in cold water for at least 30 minutes to remove excess starch.
  • Drain the potatoes, rinse under cold water, and pat them dry with a kitchen towel.

Cooking

  • In a large bowl, combine the olive oil, minced garlic, salt, black pepper, and paprika. Toss the fries in the mixture until coated.
  • Spread the fries in a single layer on the baking sheet and bake for 25-30 minutes, flipping halfway through.
  • When golden and enticing, sprinkle with grated Parmesan cheese and return to the oven for an additional 5 minutes.
  • Garnish with fresh chopped parsley before serving.

Notes

For best results, soak fries longer if possible, and ensure they are completely dried before tossing in oil. Use a single layer on the baking sheet for maximum crispiness.
