Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan, lining the bottom with parchment paper.
  • In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of the pan and bake for 10 minutes.
  • In a large mixing bowl, beat the softened cream cheese with 3/4 cup sugar and vanilla extract until smooth.
  • Add the eggs, one at a time, mixing thoroughly after each addition.
  • Stir in the sour cream and heavy cream until fully combined.
  • Pour the cheesecake mixture over the cooled crust and smooth the top.

Baking

  • Bake for 55-60 minutes until the edges are set, and the center has a slight jiggle.
  • Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  • Refrigerate for at least 4 hours, preferably overnight.

Topping

  • Sprinkle granulated sugar evenly over the chilled cheesecake, followed by brown sugar.
  • Use a kitchen torch to caramelize the sugar until golden brown.
  • Slice and serve chilled.

Notes

Consider adding citrus zest for a brighter flavor or flavored extracts for depth. Store in the refrigerator wrapped in plastic wrap for up to a week.
