  • 2.25 pounds ground beef Use lean ground beef and drain excess fat after browning.
  • 1 block Velveeta cheese Cut into chunks.
  • 8 oz cream cheese Cut into manageable pieces.

Canned Goods & Pasta

  • 1 can cream of chicken soup Adds depth to the sauce.
  • 1 can Rotel tomatoes with chilies Use juices included for flavor.
  • 1 box bowtie noodles Cook according to package directions.

Preparation

  • Heat a skillet over medium heat and brown the ground beef.
  • Drain excess fat and transfer the browned beef to the crockpot.
  • Cut the Velveeta and cream cheese into chunks.
  • Add the Velveeta, cream cheese, cream of chicken soup, and Rotel to the crockpot.
  • Stir all ingredients together until well combined.

Cooking

  • Cover the crockpot and set it to low, cooking for 3-4 hours.
  • Occasionally stir to ensure the cheeses melt evenly.
  • About 20 minutes before serving, cook the bowtie noodles in boiling water.
  • Drain the noodles and add them to the crockpot, stirring gently.

Serving

  • Serve warm and enjoy the creamy goodness together.

Notes

For healthier alternatives, swap beef for turkey or plant-based meat, and add vegetables like bell peppers or spinach. Also, consider using Greek yogurt instead of cream cheese for a lighter version.
