  • 1 cup fresh spinach vibrant and crisp
  • 1/2 cup sun-dried tomatoes packed with flavor
  • 1 cup heavy cream rich and velvety
  • 1/2 cup vegetable or seafood broth for enhanced flavor
  • 1 teaspoon dried oregano fragrant and herbaceous
  • 1/2 teaspoon red pepper flakes (optional) to add a hint of spice
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly cracked
  • 1/4 cup fresh parsley, chopped for a pop of color and freshness

Instructions
 

Cooking the Salmon

  • Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  • Season the salmon fillets with salt and black pepper on both sides. Add the salmon fillets to the skillet, cooking skin-side down if applicable.
  • Cook for 3-4 minutes on each side until they achieve a golden crust and are cooked through. Remove the salmon and set aside.

Making the Sauce

  • In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the chopped spinach and sun-dried tomatoes, cooking for 2-3 minutes until the spinach wilts.
  • Pour in the heavy cream and vegetable or seafood broth, stirring to create a smooth sauce.
  • Add the dried oregano and red pepper flakes, then season with salt and pepper to taste. Simmer for about 5 minutes to thicken.
  • Return the salmon fillets to the skillet, spooning the sauce over them and simmer for an additional 2-3 minutes.

Finishing Touch

  • Garnish with fresh parsley before serving.

Notes

For an even creamier taste, add grated Parmesan cheese to the sauce. Feel free to include other vegetables like zucchini or bell peppers for added nutrition. If desired, use skin-on salmon for better moisture retention.
