Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a medium skillet over medium-high heat until hot and sizzling.
  • Pat the scallops dry with paper towels to achieve a golden crust.

Cooking

  • Sear the scallops in a single layer for 2-3 minutes until golden brown, then flip and sear the other side for another 2-3 minutes, transferring them to a plate once done.
  • In the same skillet, add 2 tablespoons of olive oil, sauté minced garlic for about 30 seconds until fragrant.
  • Add chicken broth and heavy cream, followed by garlic powder, Italian seasoning, and parmesan cheese, whisking continuously until the mixture thickens.
  • Stir in sun-dried tomatoes and chopped spinach, allowing them to simmer until the spinach wilts.
  • Gently add the seared scallops back into the creamy sauce and stir to coat evenly.
  • Serve over pasta or alongside a fresh salad.

Notes

Patience is key for the scallops to sear properly. For a lighter version, substitute half-and-half for heavy cream. Fresh herbs like basil or parsley can add brightness. Adjust salt and pepper according to taste.
