Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
  • Season the salmon fillets generously with salt and pepper.
  • Place the fillets skin-side down in the skillet, letting them sizzle for 4-5 minutes until golden and crispy.
  • Remove the salmon from the skillet and set aside.

Cooking

  • Melt two tablespoons of butter over medium heat in the same skillet.
  • Add the minced garlic and sauté for about a minute until fragrant.
  • Stir in one cup of fresh, chopped spinach and cook until it wilts, about 2-3 minutes.
  • Add the chopped roasted red peppers, followed by half a cup of heavy cream and ¼ cup of grated Parmesan cheese.
  • Bring the mixture to a gentle simmer, stirring until the sauce thickens.
  • Stir in the lemon juice, taste, and adjust seasoning with salt and pepper.

Finishing

  • Return the salmon fillets to the skillet and spoon the creamy sauce over them.
  • Transfer the skillet to the preheated oven and bake for 5-7 minutes until the salmon is cooked through.
  • Garnish with fresh parsley if desired and serve immediately.

Notes

For a lighter twist, consider using Greek yogurt instead of heavy cream. Serve over quinoa or cauliflower rice for low-carb options.
