  • 2 fillets salmon fillets, skin on (about 1 lb.) Fresh and glistening, ready to cook.
  • 1 tbsp olive oil Rich and fragrant.
  • 1 tbsp butter Creamy and luscious.
  • 3 cloves garlic, finely diced Adding aromatic warmth.
  • 4 oz roasted red peppers, diced Vibrant and sweet.
  • 4 cups fresh baby spinach Crisp and green.
  • 1/2 cup Half & Half or heavy cream Silky smooth.
  • 1/4 cup grated Parmesan cheese Sharp and nutty.
  • 1/4 tsp red pepper flakes Or to taste for a subtle kick.
  • 1/4 cup chopped parsley Fresh and bright.
  • to taste Salt and pepper Essential for seasoning.

Instructions
 

Preparation

  • Season the salmon fillets with a sprinkle of salt and pepper.
  • Heat olive oil in a medium non-stick skillet over medium heat.
  • Place the salmon fillets in the skillet, flesh-side down first. Cook for 5 minutes on each side or until desired doneness. Remove and set aside.
  • In the same skillet, add butter and garlic. Sauté for about a minute.
  • Stir in roasted red peppers and cook for 2 minutes.
  • Add fresh spinach and let it wilt.
  • Lower the heat, pour in Half & Half and add Parmesan cheese, red pepper flakes, parsley, and season to taste.
  • Gently stir and bring to a simmer.
  • Return cooked salmon to the skillet, spooning sauce over the fillets.

Serving

  • Serve over pasta, rice, or alongside steamed vegetables.

Notes

Use fresh salmon for best flavor. Adjust red pepper flakes to your liking. Pair with a squeeze of fresh lemon juice before serving.
