Preparation

  • Pulse the shelled pistachios in a food processor until finely ground, then set aside.
  • In a large mixing bowl, beat together the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and fluffy.
  • Fold in the ground pistachios until well combined.

Assembly

  • In a shallow dish, combine the brewed espresso with any optional coffee liqueur.
  • Quickly dip each ladyfinger into the coffee mixture and lay them in a single layer in a 9x9-inch dish.
  • Spread half of the pistachio mascarpone mixture over the soaked ladyfingers.
  • Repeat the layers with another layer of dipped ladyfingers and the remaining mascarpone mixture on top.
  • Cover the dish tightly and refrigerate for at least four hours or overnight.

Serving

  • Before serving, dust with cocoa powder and sprinkle with chopped pistachios.
