Preparation

  • Heat the oil in a large saucepan over medium-high heat.
  • Season the chicken generously with 1 teaspoon of Cajun seasoning, then place it in the pan and cook until golden brown, about 2-4 minutes on each side.
  • Remove the chicken from the pan and set it aside.

Cooking

  • In the same pan, melt the butter and add the diced onion, celery, and bell pepper. Sauté until tender, around 5-7 minutes.
  • Stir in the chopped garlic, thyme, and the remaining Cajun seasoning. Cook for another minute until fragrant.
  • Pour in the chicken broth, return the cooked chicken to the pot, and add the canned tomatoes and Worcestershire sauce.
  • Add the pasta and bring the mixture to a boil.
  • Once boiling, reduce the heat and let it simmer until the pasta is al dente, approximately 7 minutes.
  • Remove the chicken to slice or shred it, then return it to the soup.
  • Turn off the heat and stir in the heavy cream and grated Parmesan until the cheese melts into the broth.
  • Add lemon juice, parsley, and green onions. Adjust the seasoning with cayenne, salt, and pepper to your liking, and serve hot.

Notes

Consider marinating the chicken in the Cajun seasoning for a few hours ahead of time to intensify the flavors. For a lighter version, substitute the heavy cream with Greek yogurt and chicken broth. Adjust seasoning before serving to elevate flavor.
