  • 3 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil

  • 1 tsp dried Italian herbs (basil, oregano, thyme)

Preparation

  • Start by chopping the garlic and ensuring your chicken is thawed.

Cooking

  • Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then nestle them into the skillet. Cook for about 6-7 minutes per side until they turn golden brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant and golden.
  • Pour in the heavy cream while stirring, then sprinkle in the dried herbs and mix in the freshly grated Parmesan cheese.
  • Slice the cooked chicken into bite-sized pieces and return it to the skillet. Add in the cooked pasta, tossing everything together.

Serving

  • Scoop the creamy pasta onto plates or into bowls and garnish with extra Parmesan cheese if desired.

Notes

For lighter variations, consider using low-fat cream or whole wheat pasta. Serve with a side salad or garlic bread for a complete meal.
