Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking dish.
  • In a large mixing bowl, combine the white rice and chicken broth.
  • Carefully pour the rice and broth mixture into the prepared baking dish.
  • In a skillet heated over medium-high heat, add the bite-sized chicken pieces and cook until no longer pink in the center.
  • Add the frozen peas and carrots, diced onion, diced celery, and diced bell pepper to the skillet and cook for an additional 2-3 minutes.
  • In a separate bowl, mix the mayonnaise, sour cream, salt, black pepper, garlic powder, and paprika.
  • Pour the creamy mayonnaise mixture over the chicken and vegetables in the skillet and stir until well combined.
  • Spread the chicken and vegetable mixture evenly over the rice in the baking dish.
  • Sprinkle the shredded cheddar cheese and grated Parmesan cheese generously over the top.

Baking

  • Cover the baking dish with aluminum foil and bake for 30 minutes.
  • After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  • Let the bake cool for a few minutes before serving.

Notes

Add fresh herbs like parsley or thyme for an aromatic touch. For heat, consider jalapeños or hot sauce. You can substitute chicken with turkey or use leftover rotisserie chicken.
