Cheesy Sauce

Preparation

  • Preheat your oven to 400°F.
  • Steam the broccoli and cauliflower florets in a steamer basket over boiling water for about 6-8 minutes, just until they are tender-crisp. Drain and set aside.

Making the Sauce

  • In a medium saucepan, melt 1/4 cup of butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to eliminate the raw flour taste.
  • Gradually add the whole milk, whisking continuously until the sauce thickens to a creamy consistency.
  • Stir in the garlic powder, salt, onion powder, black pepper, and nutmeg. Mix well.
  • Remove the saucepan from heat and add 1/2 cup of your shredded cheese mix. Stir until the cheese is melted and fully incorporated into the sauce.

Assembly and Baking

  • Combine the creamy sauce with your steamed broccoli and cauliflower, mixing everything thoroughly.
  • Transfer the mixture to a greased baking dish. Top with the remaining cheese and sprinkle the panko breadcrumbs evenly over the top for that crunchy finish.
  • Bake in the preheated oven for 35-40 minutes, or until the dish is bubbling and the top is golden brown.
  • Once out of the oven, let the dish sit for a few minutes before serving. Garnish with chopped chives or green onion if desired.

Notes

For an extra depth of flavor, try sautéing the garlic powder in with the butter before adding the flour. Feel free to mix in different cheeses like feta or goat cheese for a unique twist. Add cooked chicken or your favorite protein to make it a heartier meal. Swap out the panko breadcrumbs for crushed crackers or potato chips for a delightful crunch. Don't hesitate to adjust the spices to your preference; adding a pinch of cayenne can spice things up!
