Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • Grease a 9-inch springform pan.
  • In a mixing bowl, combine the crushed graham crackers and melted butter, mixing until the crumbs are evenly coated.
  • Press the mixture firmly into the bottom of the prepared pan to create a sturdy crust.
  • Bake for 10 minutes, then remove from the oven and allow to cool.
  • In a large bowl, beat the softened cream cheese and sugar together until smooth.
  • Add the mashed bananas, eggs, vanilla extract, and cinnamon to the cream cheese mix, and stir well to combine.

Baking

  • Pour the banana cheesecake filling into the cooled crust, smoothing the top with a spatula.
  • Bake for 50-60 minutes, watching for the center to set but retain a slight wobble.
  • After baking, turn off the oven, crack the door open slightly, and let the cheesecake cool for 1 hour.
  • Refrigerate for at least 4 hours, or overnight.
  • Before serving, garnish with fresh sliced bananas.
