  • In a large pot, cook the ground turkey sausage over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  • Add the chopped onion and minced garlic to the pot, sautéing until the onion becomes soft and fragrant.
  • Pour in the chicken broth and bring it to a simmer.
  • Add the crushed tomatoes, broken lasagna noodles, basil, oregano, red pepper flakes (if desired), salt, and pepper. Stir to combine and cook for about 10-12 minutes, or until the noodles are tender.
  • Mix in the heavy cream, ricotta, Parmesan, and mozzarella cheeses. Stir until the cheese has melted.
  • Taste the soup and adjust seasoning with more salt, pepper, or red pepper flakes if necessary.
  • Serve the soup in bowls, garnishing with fresh parsley.

Notes

For extra flavor, add a splash of lemon juice when serving. Leftover vegetables can be added for nutrition. You can also use rotisserie chicken instead of turkey sausage for a quicker option.
