Ingredients
  

For the sweet potatoes

  • 2 large sweet potatoes These will be the base for the dish.

For the filling

  • 1 cup fresh or frozen cranberries Tartness adds a vibrant zing.
  • 1 juicy apple, diced Use a sweet variety like Fuji or a tart variety like Granny Smith.
  • 2 tablespoons butter For sautéing the filling.
  • 1/4 teaspoon nutmeg Freshly grated for best flavor.
  • 1/2 teaspoon cinnamon Adds warmth and sweetness.
  • 2 tablespoons maple syrup Enhances the sweetness of the filling.
  • Salt, to taste Used to enhance all flavors.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pierce the sweet potatoes with a fork and bake them for 45-50 minutes until soft.

Filling

  • In a skillet, melt the butter over medium heat and add the diced apple, cranberries, nutmeg, cinnamon, and salt. Cook for 5-7 minutes.
  • Stir in the maple syrup and cook for an additional 2 minutes.

Assembly

  • Scoop out the flesh from the sweet potatoes and mix it with half of the cranberry-apple filling.
  • Spoon the mixture back into the potato skins and top with the remaining filling.

Final Bake

  • Bake for another 10-12 minutes until heated through and slightly caramelized.

Notes

Consider adding chopped pecans for a crunch or drizzle some extra maple syrup before serving. Experiment with different apple varieties to suit your taste.
