Preparation

  • In a large mixing bowl, combine 1 cup of cottage cheese, 2 cups of all-purpose flour, 1 tsp of baking powder, and 1/2 tsp of salt.
  • Drizzle in 1 tbsp of olive oil and add 1/4 cup of warm water. Mix until you form a shaggy dough.
  • Transfer dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
  • Divide the dough into small portions (the size of a golf ball). Roll each into a flat circle.

Cooking

  • Heat a non-stick pan over medium heat. Cook each flatbread for 2-3 minutes on each side until golden-brown.

Notes

For best results, ensure the cottage cheese is at room temperature before use. Knead thoroughly for elasticity and roll the flatbreads evenly for consistent texture. Avoid cooking at high temperatures to prevent burning.
