Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 15x10-inch jelly roll pan with parchment paper.
  • In a large mixing bowl, beat the eggs and granulated sugar until thick and pale.
  • Add vanilla extract and mix well.
  • In a separate bowl, whisk together the all-purpose flour, cocoa powder, salt, and baking powder.
  • Gradually fold the dry ingredients into the egg mixture.
  • Spread the batter evenly in the prepared pan.
  • Bake for 12-15 minutes until the cake springs back when lightly touched.
  • Let the cake cool for a few minutes, then invert it onto a powder-sugar dusted kitchen towel.
  • Roll the warm cake tightly with the towel, and let it cool completely.

Making the Cookie Dough Filling

  • In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Stir in the vanilla extract, flour, and salt until nicely combined.
  • Fold in the mini chocolate chips.

Assembling the Cake Rolls

  • Unroll the cooled cake and spread the softened vanilla ice cream evenly over the surface.
  • Spread the cookie dough filling on top of the ice cream.
  • Carefully roll the cake back up without the towel and wrap it tightly in plastic wrap.
  • Freeze for at least 4 hours until firm.

Serving

  • Slice into pieces and serve immediately.
  • Consider adding a drizzle of chocolate sauce or fresh fruit as garnish.

Notes

Allow the cake to cool completely before rolling to prevent cracks. For healthier alternatives, use whole wheat flour or Greek yogurt.
