  • 10-12 slices slices of canned pineapple (one 20 oz. can)
  • 200 ml whole milk (2⁄3 cup + 3 tablespoons)
  • 1 large egg, room temperature
  • 100 g all-purpose flour (2⁄3 cup + 2 tablespoons)
  • 120 g shredded coconut
  • 20 g icing (powdered) sugar (2 1⁄2 tablespoons)
  • 1 pinch of salt
  • 1 tablespoon olive oil
  • 1000 ml frying oil (33.8 fl oz)

Preparation

  • Sift the all-purpose flour and icing sugar into a large mixing bowl.
  • Create a well in the center of the dry ingredients and add the large egg and olive oil, then mix until combined.
  • Gradually pour in the cold milk while stirring until the batter is smooth and thick, cover and refrigerate for at least 2 hours.

Frying

  • Drain the canned pineapple slices and gently pat them dry with paper towels.
  • Heat the frying oil in a large saucepan over medium-high heat until it reaches 350°F (175°C).
  • Spread the shredded coconut on a shallow plate, dip each slice of pineapple into the batter, and then dredge it in the coconut.
  • Carefully place two battered pineapple slices into the hot oil, frying for 1-3 minutes per side until golden brown.
  • Transfer the fritters to a plate lined with paper towels to absorb excess oil and serve hot.

Notes

For added flavor, consider sprinkling cinnamon or nutmeg into the batter. Use whole wheat flour for a healthier alternative. Ensure consistent oil temperature when frying.
