Instructions
 

Preparation

  • Begin by generously seasoning the chuck roast with salt and black pepper on all sides.
  • In a skillet, heat the olive oil over medium-high heat. Sear the seasoned roast for about 3–4 minutes on each side until it develops a golden-brown crust.
  • In your slow cooker, place the peeled and chopped carrots, potatoes, onion, and minced garlic.
  • Carefully set the seared roast on top of the bed of vegetables in the slow cooker.
  • In a separate bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary until well combined.
  • Pour this mixture over the pot roast, ensuring it covers the meat and vegetables.
  • Toss the bay leaves into the slow cooker for added flavor.

Cooking

  • Cover the slow cooker and set it to low for 8–9 hours or high for 4–5 hours until the meat is tender.

Serving

  • Once cooked, remove the bay leaves, slice the pot roast, and serve it with the vegetables and broth.
