Ingredients

For the Cake

  • 1 cup flour Tender and light, this flour forms the essential base that gives structure to your cake.
  • 1/2 cup cocoa powder Rich and aromatic, cocoa powder adds depth and an irresistible chocolatey flavor.
  • 1 tsp baking powder This leavening agent ensures your cake rises to perfection, creating a fluffy texture.
  • 1/2 tsp baking soda Works in tandem with baking powder to provide that perfect lift and softness.
  • 1/2 cup sugar Sweet, crystalline sugar balances the flavors, enhancing the chocolate and raspberries.
  • 1/2 cup milk Creamy and soothing, milk adds moisture and richness to the cake batter.
  • 1/4 cup melted butter The velvety butter infuses richness into the cake, creating a luxurious mouthfeel.
  • 2 eggs eggs These binders enrich the cake and contribute to its tender structure.
  • 1 tsp vanilla extract Fragrant and sweet, vanilla enhances the overall flavor profile.

For the Mousse

  • 1 cup fresh raspberries Juicy, plump, and bursting with flavor, they create a refreshing contrast to the chocolate.
  • 1/4 cup sugar A touch of sweetness to balance the flavor of the raspberry puree in the mousse.
  • 1 tsp lemon juice Bright and zesty, it elevates the raspberry flavor, adding a delightful tartness.
  • 1 tsp gelatin This helps set the mousse, giving it that smooth, creamy consistency.
  • 2 tbsp water Used to dissolve the gelatin, ensuring a perfect incorporation into the mousse.
  • 1 cup heavy cream This lends a silky richness that makes the mousse irresistibly creamy.

For the Ganache

  • 1/2 cup dark chocolate chips Deep, intense chocolate to create a decadent ganache.
  • 1/4 cup heavy cream This adds gloss and richness to the chocolate topping.

Instructions

Bake Cake

  • Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and sugar. Whisk these dry ingredients together until well blended.
  • In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract until combined.
  • Pour the wet mixture into the dry ingredients and fold gently until just combined – be careful not to over-mix!
  • Pour this luscious batter into a greased cake pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Let it cool completely before proceeding.

Make Mousse

  • While your cake cools, prepare the raspberry mousse. In a blender, combine the fresh raspberries, 1/4 cup sugar, and lemon juice; blend until smooth.
  • Strain the mixture through a fine-mesh sieve to remove the seeds, collecting the puree in a bowl.
  • In a small dish, dissolve the gelatin in 2 tablespoons of water and let it sit for a few minutes to bloom.
  • Gently heat until melted, then stir into the raspberry puree.
  • In another bowl, whip the heavy cream until soft peaks form, then fold it delicately into the raspberry mixture.
  • The mousse should be airy and light.

Assemble

  • Once the chocolate cake has cooled, spread a generous layer of the raspberry mousse evenly over the top.
  • Make sure to smooth it out for an even finish.
  • Cover with plastic wrap and chill in the refrigerator for at least 2 hours, allowing the mousse to set and embrace the cake.

Top with Ganache

  • Now it’s time for the chocolate ganache. Heat 1/4 cup of heavy cream in a small saucepan until it just begins to simmer.
  • Pour the hot cream over the dark chocolate chips in a bowl, letting it sit for a minute.
  • Stir the mixture gently until the chocolate is fully melted and the ganache is smooth.
  • Allow it to cool slightly before pouring it over the set mousse layer, creating a glossy finish.

Chill & Serve

  • Refrigerate your masterpiece for an additional hour to set the ganache.
  • When ready to serve, slice into decadent pieces, revealing the beautiful layers of chocolate and raspberry.
  • Each bite will transport you to dessert heaven!

Notes

For success, measure all ingredients accurately and use room-temperature eggs and butter. When whipping the cream, achieve soft peaks for a light mousse. Chilling the mousse overnight enhances its flavor.
