Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until fully combined.
  • Gradually add the dry ingredients, stirring until just combined.
  • Stir in the chocolate chips until evenly distributed.

Cheesecake Filling

  • In a separate bowl, beat together the cream cheese, powdered sugar, and the additional vanilla extract until smooth and creamy.

Assembling

  • Take a tablespoon of cookie dough and flatten it in your palm.
  • Place about 1 teaspoon of cheesecake filling in the center and top with another tablespoon of cookie dough.
  • Seal the edges around the filling to make a ball.
  • Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes, or until the cookies are golden around the edges.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes
