Preparation

  • In a large skillet, heat olive oil over medium heat until shimmering.
  • Add the diced potatoes and chopped onion to the skillet. Cook until the potatoes are crispy and golden brown, about 10-15 minutes.

Cooking

  • Push the potatoes to one side of the skillet and add the ground beef to the empty side. Cook until browned.
  • Blend the beef and potatoes together after browning.
  • Pour in the chili beans and season with salt and pepper.
  • Reduce the heat to low and sprinkle shredded cheese evenly over the mixture, allowing it to melt.
  • Cover the skillet with a lid to ensure that the cheese melts thoroughly.

Notes
