  • 4 pieces boneless skinless chicken breasts Approximately 1.5 lbs
  • 2 tablespoons olive oil For cooking
  • 1 medium onion, sliced
  • 1 piece red bell pepper, sliced
  • 1 piece green bell pepper, sliced
  • 1 piece yellow bell pepper, sliced
  • 3 tablespoons fajita seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup fresh cilantro, chopped

Cooking

  • Preheat a large skillet over medium-high heat and add olive oil, letting it shimmer enticingly.
  • Season the chicken breasts generously with fajita seasoning and lay them in the hot skillet, letting them sizzle for about 6 minutes per side until golden-brown.
  • Once cooked through, remove the chicken from the skillet and let it rest.
  • In the same skillet, sauté the onions and assorted bell peppers for about 5 minutes until tender yet crisp.
  • Slice the rested chicken and return it to the skillet, stirring with the peppers and onions.
  • Serve over rice or quinoa and top with sour cream, cheddar cheese, and fresh cilantro.

Notes

Feel free to customize by using grilled chicken or Greek yogurt instead of sour cream. Add more veggies for extra nutrition.
