  • 8 oz cream cheese, softened rich and creamy
  • 1 cup sour cream tangy and smooth
  • 1 cup shredded mozzarella cheese melty and stretchy
  • 1/2 cup grated Parmesan cheese sharp and nutty
  • 1 cup cooked rice or pasta hearty and comforting
  • 1 tsp garlic powder savory and aromatic
  • 1 tsp onion powder sweet and fragrant
  • to taste Salt and pepper for balance
  • 1 tsp Italian seasoning optional, adding warmth and depth

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken with the chopped spinach and softened cream cheese.
  • Stir in the sour cream, mozzarella cheese, and half of the grated Parmesan until well mixed.
  • Season with garlic powder, onion powder, salt, pepper, and Italian seasoning if desired.
  • Gently fold in the cooked rice or pasta.
  • Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Sprinkle the remaining Parmesan cheese on top.

Baking

  • Bake for 25-30 minutes until the casserole is bubbling and the top is golden.
  • Allow to cool for a few minutes before serving.

Notes

For healthier versions, consider using low-fat cream cheese and sour cream. You can substitute cooked quinoa for rice or pasta, or add other vegetables like bell peppers or zucchini.
