Ingredients
  

For the Roasted Tomatoes

  • 10 oz cherry tomatoes or grape tomatoes, sliced in half Juicy and sweet
  • 2 tablespoons olive oil Golden and fragrant
  • 3 cloves garlic, minced Provides a robust yet delightful aroma
  • to taste Salt and pepper For seasoning

For the Chicken

  • 1.5 lb chicken breast (2 skinless, boneless chicken breasts), thinly sliced Tender and lean
  • 1/4 teaspoon salt To season the chicken perfectly
  • 2 teaspoons smoked paprika Adding a depth of flavor with a gentle smokiness
  • 1 teaspoon Italian seasoning For a touch of herbal essence
  • 2 tablespoons olive oil For cooking the chicken to perfection

For the Pasta

  • 8 oz spaghetti Al dente and ready to soak up the flavors
  • 4 tablespoons butter Creamy and rich
  • 1/2 lemon (preferably Meyer lemon), thinly sliced Offering a zesty brightness
  • 4 cloves garlic, minced For that aromatic hit
  • 8 oz Burrata cheese Creamy and decadent
  • 1/2 cup fresh basil, chopped Adding a fresh herbal note
  • 1/3 cup pine nuts, lightly toasted Offering a nutty crunch

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • In a mixing bowl, combine the sliced cherry tomatoes with 2 tablespoons of olive oil, minced garlic, and season with salt and pepper.
  • Spread the seasoned tomatoes on a parchment-lined baking sheet and roast for about 20 minutes.

Cooking the Chicken

  • Season the thinly sliced chicken breasts with salt, smoked paprika, and Italian seasoning.
  • In a skillet, heat 2 tablespoons of olive oil over medium heat and add the seasoned chicken.
  • Cook for approximately 5 minutes on each side, or until golden brown and fully cooked.
  • Remove the chicken, slice thinly, and set aside.

Combining Ingredients

  • In the same skillet, add lemon slices, minced garlic, and 4 tablespoons of butter. Cook briefly until aromatic.
  • Cook spaghetti according to package instructions. Reserve a cup of pasta water before draining.
  • Add cooked spaghetti, lemon slices, and garlic butter to the skillet. Toss well and remove lemon slices afterwards.

Serving

  • Layer the spaghetti on plates, topping with slices of chicken, roasted tomatoes, and dollops of creamy Burrata cheese.
  • Garnish with freshly chopped basil and lightly toasted pine nuts.

Notes

For the best flavor, consider marinating the chicken in olive oil and seasonings for a couple of hours ahead of cooking. Add a splash of your favorite stock to enhance the flavor further. Always toast pine nuts for maximum crunch.
