Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice off the root and stem ends of each onion, cut them in half vertically, and peel away the outer layers. Chop the onions into slivers that are about 1/4-inch to 1/2-inch thick.
  • Place the chopped onions in a saucepan, cover them with water, and bring to a boil. Allow them to simmer for about 8 minutes.
  • Drain the onions thoroughly and toss them with 2 tablespoons of unsalted butter while they are still warm.

Mixing and Baking

  • In a large bowl, beat the eggs and combine them with the evaporated milk.
  • Add the warm onions, crumbled Ritz crackers, shredded cheddar cheese, salt, and pepper. Mix everything together well.
  • Coat a 9×13-inch baking dish with non-stick spray and pour in the onion mixture, spreading it evenly.
  • In a separate bowl, mix the remaining crumbled Ritz crackers with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
  • Place the casserole in the preheated oven and bake for 45 minutes, until set in the middle and golden-brown on top.

Notes

For extra flavor, consider adding fresh herbs, experimenting with different types of cheese, or pre-preparing the dish a day ahead of time.
