For the filling

  • 1 tbsp olive oil Fragrant and rich for sautéing.
  • 8 oz raw shrimp (no tails) Succulent and tender.
  • 1 tbsp minced garlic Aromatic and flavorful.
  • 1/3 cup mayonnaise Creamy base for a luscious filling.
  • 1/4 cup Parmesan cheese Adds a sharp tang and richness.
  • 1 cup shredded mozzarella cheese Ooey-gooey goodness.

For the salmon

  • 2 8 oz salmon fillets Fresh and flaky, the star of the dish.
  • 1 tsp salt To enhance all the savory flavors.
  • 1/2 tsp pepper For a hint of warmth.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium skillet over medium heat, add the olive oil; it should shimmer, showing it’s ready for cooking.
  • Toss in the shrimp and minced garlic, stirring often to avoid burning the garlic. Sauté until the shrimp turns pink and opaque, which should take about 3-4 minutes.
  • Remove the skillet from heat and stir in the mayonnaise, Parmesan, and shredded mozzarella cheese until blended into a creamy mixture.
  • Prepare a baking sheet lined with parchment paper and lay the salmon fillets on top to prevent sticking.
  • Carefully stuff the salmon fillets with the shrimp and cheese mixture, reserving a small amount for the topping.
  • Season each stuffed fillet with salt and pepper.

Cooking

  • Bake in the preheated oven for about 20 minutes until the salmon is cooked through and flakes easily with a fork.
  • Remove from the oven and top each salmon fillet with the reserved stuffing.
  • Broil for an additional 5 minutes or until the top is golden brown and bubbling.

Notes

For an extra kick, consider adding a splash of lemon juice or a pinch of cayenne pepper to the shrimp mixture. You can also substitute the shrimp with crab meat for a seafood twist and add fresh herbs like dill or parsley.
