  • 1 pound lean ground beef Use lean for a healthier option.
  • 1 cup nacho cheese sauce Feel free to use spicy or mild nacho cheese.
  • 1/2 cup sour cream Optional for topping.
  • 1 can Rotel (green chilis with diced tomatoes) Adds flavor and moisture.
  • 1/2 cup chopped green peppers Fresh or canned can be used.
  • 1/2 cup diced onions Yellow or white onions work well.
  • 1 packet taco seasoning mix Use your preferred brand.
  • to taste Nacho cheese flavored Doritos, crushed Crushed for added crunch.
  • 4 large flour tortilla wraps Can substitute with whole wheat for a healthier choice.
  • to taste shredded lettuce Optional topping for freshness.

Instructions
 

Preparation

  • Heat a skillet over medium-high heat and add the lean ground beef, cooking until thoroughly browned. Drain any excess fat.
  • Add diced onions and chopped green peppers to the skillet and sauté for about 4 minutes until tender.
  • Sprinkle in the taco seasoning mix and stir well to coat the beef and vegetables.
  • In a separate bowl, mix the Rotel and nacho cheese sauce until well combined.
  • Lay the flour tortillas flat and spoon the nacho cheese mixture down the center. Follow with a portion of the meat and vegetable mixture.
  • Add dollops of sour cream and sprinkle crushed Doritos and shredded lettuce on top.
  • Fold the sides of each tortilla inwards and roll them up tightly.
  • In the same skillet, heat a drizzle of oil over medium heat and place the burritos seam-side down, cooking until golden and crispy, about 3-4 minutes per side.
  • Cut burritos in half if desired, and serve immediately with extra toppings or dips.

Notes

For extra spice, consider adding jalapeños or using spicy nacho cheese. These burritos are also great for meal prep and can be stored in the refrigerator for up to three days.
