  • 2 cups mashed potatoes preferably leftover
  • 1 cup shredded cheddar cheese sharp and tangy
  • 1/4 cup grated parmesan cheese adds a nutty flavor
  • 1/4 cup sour cream or cream cheese optional for added creaminess
  • 1/4 cup chopped green onions or chives for freshness
  • 1 large egg acts as a binding agent
  • to taste Salt & pepper essential seasonings
  • 1/4 cup breadcrumbs for coating
  • 2 tbsp butter, melted for drizzling on top

Preparation

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, grated parmesan cheese, sour cream (or cream cheese), chopped green onions (or chives), and the egg. Stir until well combined, forming a creamy mixture.
  • Season the mixture with salt and pepper to taste.
  • Using your hands, shape the mixture into small balls or puffs, about 1-2 tablespoons in size.
  • Place the shaped puffs onto the prepared baking sheet, leaving space between each puff.
  • Roll each puff in breadcrumbs to lightly coat them.
  • Drizzle the melted butter over the tops of the puffs.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
  • Serve warm and enjoy!

Notes

For added flavor variations, consider using different cheeses, adding jalapeños for heat, or experimenting with herbs.
