Ingredients
  

For the zucchini steaks

  • 2 medium medium zucchini, firm and fresh Ensure they are fresh for the best texture
  • 1 tsp Kosher salt Essential for enhancing flavor
  • 4 cloves garlic, finely chopped or grated Adds depth of flavor
  • 1/4 tsp crushed red pepper flakes Provides a subtle kick
  • 4 Tbsp extra-virgin olive oil Divided for frying and brushing
  • 2 oz mozzarella, shredded For that heavenly melt
  • 1 oz Parmesan, finely shredded Adds a nutty richness
  • 2 Tbsp fresh basil, torn For garnish and freshness

Instructions
 

Preparation

  • Slice each zucchini in half lengthwise to yield 4 'steaks.' The ideal thickness should showcase the zucchini’s natural texture.
  • Score the flesh side of each steak about 1/4' deep diagonally at 1/2' intervals.
  • Sprinkle the scored sides with 1 teaspoon of salt and let them sit for about 15 minutes.

Cooking

  • Preheat your oven to 425°F and place a rack in the center.
  • In a large skillet over medium heat, cook the garlic and red pepper flakes in 2 tablespoons of olive oil for about 1-2 minutes until fragrant.
  • Transfer the garlic oil to a small bowl and set aside.
  • In the same skillet, heat 1 tablespoon of olive oil and pat the zucchini dry.
  • Arrange two zucchini halves flesh-side down and cook until golden brown, about 2-3 minutes. Repeat with remaining halves.
  • Transfer browned zucchini to a baking sheet, flesh side up, and brush generously with garlic oil.
  • Bake in the oven for approximately 8 to 10 minutes until tender in the center.
  • Sprinkle mozzarella and Parmesan on top and broil on high until melted and brown, about 2-3 minutes.
  • Transfer zucchini to a platter and garnish with fresh basil and a sprinkle of red pepper flakes.

Notes

Add a squeeze of lemon juice before serving to brighten flavors. Roasting garlic beforehand adds a deeper flavor. Experiment with cheese varieties and herbs for different twists.
