Instructions
 

Preparation

  • Preheat your grill or skillet over medium heat.
  • Brush chicken breasts with olive oil and season with salt, pepper, and garlic powder.
  • Grill the chicken for 6-7 minutes per side, cooking until the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for a few minutes, then slice into thin strips.
  • In a small bowl, mix the mayonnaise and Dijon mustard.
  • Butter one side of each slice of garlic bread.

Cooking

  • Toast the bread buttered side down in a skillet over medium heat until golden brown, about 2-3 minutes per side.
  • Spread the mayo-mustard mixture on the unbuttered side of the toasted garlic bread slices.
  • Layer sliced chicken and mozzarella cheese on one slice of bread and top with another slice.
  • Grill the assembled sandwich in the skillet for 2-3 minutes, pressing gently to melt the cheese and crisp the bread.
  • Slice the sandwich in half, sprinkle with parsley if desired, and serve warm.

Notes

For extra flavor, add mixed Italian herbs or fresh basil to the mayo. Experiment with different cheeses and consider adding roasted veggies or switched mayo for Greek yogurt for a healthier option.
