  • 1 pound ground beef juicy and flavorful
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning packed with spicy flavor
  • 1 package (9 oz) cheese tortellini soft and cheesy
  • 2 cups shredded cheddar cheese ooey-gooey goodness
  • 1 cup enchilada sauce for that signature tang
  • ½ cup sour cream adding creaminess
  • olive oil for sautéing

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion to the skillet and sauté for 3-4 minutes until translucent.
  • Stir in the minced garlic and sauté for another minute.
  • Add the ground beef to the skillet and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the black beans, diced tomatoes, and taco seasoning. Let it simmer for 5 minutes.
  • In a separate large pot, bring salted water to a boil and cook the cheese tortellini according to package instructions (3-5 minutes). Drain and set aside.
  • Preheat the oven to 350°F (175°C).

Assembly

  • Combine the cooked tortellini with the beef mixture in the skillet.
  • Spread a layer of enchilada sauce in the bottom of a baking dish.
  • Layer the tortellini and beef mixture on top.
  • Pour the remaining enchilada sauce over the dish and sprinkle with cheddar cheese.

Baking

  • Cover with foil and bake in the preheated oven for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

Notes

For extra flavor, consider sautéing with cumin or coriander, or adding jalapeños or chili flakes. Garnish with fresh cilantro or green onions before serving.
