Preparation

  • Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
  • In a small bowl, combine cream cheese, powdered sugar, and 1/2 tsp vanilla extract. Use a hand mixer or whisk to beat until smooth and creamy. Set aside.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
  • In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition. Mix in 2 tsp vanilla extract.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined. Fold in the semisweet chocolate chips.
  • Take about 1 tablespoon of cookie dough, flatten it slightly, spoon a teaspoon of cheesecake filling into the center, and top with another tablespoon of dough. Seal edges to form a ball.
  • Place the stuffed cookie balls on the prepared baking sheet, spaced about 2 inches apart.
  • Bake for 10-12 minutes or until edges are golden brown; centers should remain soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure cream cheese is softened for a smooth filling. If dough is sticky, chill for 30 minutes before shaping. Experiment with different chocolate types or add a dash of cinnamon.
