Macaron Shell Ingredients

Filling Ingredients

  • 100 g cream cheese Adds a rich flavor.
  • 50 g unsalted butter (softened) Adds velvety texture.
  • 100 g powdered sugar For sweetening the filling.
  • 1/2 tsp vanilla extract Adds depth of flavor.
  • 1/2 tsp cinnamon Warm spice that complements carrot.
  • 30 g finely grated carrot (excess moisture squeezed out) Infuses macarons with flavor.

Instructions
 

Preparation

  • Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper or silicone baking mats.
  • Sift almond flour and powdered sugar into a bowl to eliminate lumps.
  • In a clean bowl, beat egg whites on medium speed until soft peaks form.
  • Gradually add granulated sugar while continuing to beat until stiff peaks form. Optionally, add cream of tartar during this process.
  • Gently fold dry ingredients into the whipped egg whites using a spatula with care not to deflate.
  • Divide the batter, adding food coloring to one half if desired.
  • Transfer the batter to piping bags and pipe small circles onto the lined sheets, optionally piping small green stems.
  • Let macarons rest for 30-60 minutes to form a skin.

Baking

  • Bake for 15-18 minutes, ensuring they cool completely on sheets afterward.

Filling Preparation

  • Beat cream cheese and softened butter until smooth. Add powdered sugar, vanilla extract, and cinnamon, mixing until well combined.
  • Gently fold in grated carrot.

Assembly

  • Pair macaron shells by size and pipe filling onto one shell, then sandwich with another.
  • Allow to rest in the fridge for at least 24 hours before enjoying.

Notes

Ensure mixing bowls and utensils are grease-free. Avoid overmixing the batter to keep the rise intact. Experiment with flavors and fillings for variety.
