Preparation

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until it resembles wet sand.
  • Press this mixture firmly into the bottom of a 9-inch springform pan to create a sturdy crust.
  • Bake for 8-10 minutes until lightly golden, then allow it to cool.

Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the sugar and vanilla extract, mixing until fully combined.
  • Add eggs one at a time, ensuring each is incorporated before adding the next.
  • Fold in the sour cream until smooth.
  • Gently mix in the mini chocolate chips and caramel sauce.

Baking

  • Pour the cheesecake filling over the cooled crust and smooth the top.
  • Bake for 55-65 minutes until the center is set but still slightly jiggly.
  • Once baked, turn off the oven and let the cheesecake cool inside with the door ajar for about an hour.

Chilling
