Ingredients

For the Chicken

  • 1.5 lbs boneless skinless chicken breasts sliced into strips
  • 2 tbsp olive oil for added richness
  • 1 cup buttermilk acts as a marinade

For the Breading

  • 1 cup all-purpose flour provides a traditional crispy texture
  • 0.5 cup cornmeal adds a delightful crunch
  • 1 tbsp Cajun seasoning for seasoning
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • vegetable oil for frying

Instructions

Marinating the Chicken

  • Place chicken strips in a bowl with buttermilk and 1 tablespoon of Cajun seasoning. Toss to coat thoroughly and refrigerate for at least 30 minutes.

Preparing the Breading

  • In a shallow bowl, combine flour, cornmeal, remaining Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper. Mix until well blended.

Coating the Chicken

  • Remove chicken strips from buttermilk, allowing excess to drip off. Dredge each strip in the flour mixture, ensuring a generous coating.

Frying the Strips

  • Heat vegetable oil in a skillet over medium-high heat. Fry chicken strips in batches for about 3-4 minutes per side until golden brown and cooked through.

Serving the Strips

  • Transfer cooked strips to a plate lined with paper towels to absorb excess oil. Serve hot with your favorite dipping sauce.

Notes

For extra crunch, double-dip the chicken by dipping it in buttermilk before frying again. Marinating overnight maximizes flavor. Can be baked at 425°F for a healthier option.
