Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced Cajun sausage and brown it for about 5 minutes.
  • Toss in the chopped onion, bell pepper, and minced garlic, sautéing for about 3 minutes until soft.
  • Stir in the long-grain rice, followed by the Cajun seasoning, smoked paprika, salt, and black pepper, cooking for 2 minutes.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Cover the skillet tightly and reduce heat to low, cooking for 18-20 minutes.
  • Remove from heat and let it rest for a couple of minutes before uncovering.
  • Garnish with chopped green onions, if desired, before serving warm.

Notes

For lighter alternatives, consider turkey or chicken sausage. Adjust the spice level by using less Cajun seasoning.
