  • 1 teaspoon vanilla extract Enhances flavor in the filling.

For the Chocolate Dip

  • 1 cup semi-sweet chocolate chips Melty chocolate chips will crown your cookies, inviting an irresistible richness.
  • 1 tablespoon coconut oil or vegetable oil A little added fat to ensure the chocolate dip glides on smoothly, giving you that perfect shell.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the melted butter and granulated sugar. Stir in the eggs and vanilla extract to form a glossy batter.
  • In another bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.

Baking

  • Drop portions of the brownie batter onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges look set but the centers remain slightly soft. Let them cool completely.

Peanut Butter Filling

  • In a separate bowl, mix the creamy peanut butter, powdered sugar, and vanilla extract until smooth.
  • Once cookies are cool, gently flatten each one slightly and place a dollop of the peanut butter filling on top before sandwiching another cookie on top.

Chocolate Dipping

  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in 30-second intervals, stirring in between until smooth.
  • Dip the top of each cookie sandwich into melted chocolate and allow excess to drip off. Place cookies back on the parchment-lined baking sheet.

Setting

  • Allow the chocolate to set before serving.

Notes

Serve alongside a glass of cold milk or a rich cup of coffee. For healthier variations, substitute applesauce for half of the butter or use natural sweeteners.
